Cabbage Salad with Apples & Cranberry Vinaigrette

Ingredients
Napa cabbage*, thinly sliced
1-2 crisp apples*, thinly sliced
1/4 cup dried cranberries
1/4 cup sunflower seeds (or seed or nut of your choice)
Toppings: shaved parmesan cheese
Cranberry Vinaigrette:
1/4 cup fresh whole cranberries
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp honey or maple syrup*
Salt and pepper to taste

Method
Make the vinaigrette: Blend cranberries with olive oil, vinegar, honey, salt, and pepper until smooth. Adjust seasoning as needed.
