Cabbage Salad with Apples & Cranberry Vinaigrette

This light and tangy Napa cabbage salad is the perfect way to celebrate winter flavors. Crisp apples, tender Napa cabbage, and crunchy sunflower seeds are brought together with a sweet-tart cranberry vinaigrette for a dish that’s as festive as it is delicious. Whether you're hosting a holiday meal or just looking for a healthy side, this salad is sure to impress.

Ingredients

  • Napa cabbage*, thinly sliced

  • 1-2 crisp apples*, thinly sliced

  • 1/4 cup dried cranberries

  • 1/4 cup sunflower seeds (or seed or nut of your choice)

  • Toppings: shaved parmesan cheese

Cranberry Vinaigrette:

  • 1/4 cup fresh whole cranberries

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp honey or maple syrup*

  • Salt and pepper to taste

Method

  1. Make the vinaigrette: Blend cranberries with olive oil, vinegar, honey, salt, and pepper until smooth. Adjust seasoning as needed.
