Beet Ginger Lime Juice

Ingredients
2 cups water
1 small to medium beet (about the size of a lime)*
1/2 cup fresh lime juice (about 4 limes)
2 tablespoons maple syrup or honey*
2 inches ginger*
Lime wedges for garnish

Method
Add 2 cups water and 1/2 cup lime juice to your blender.
Slice the beet into 1/4" thick medallions and drop those in the blender.
Add 2 tablespoons maple syrup or honey.
Blend until very smooth.
If you'd like a "pulp free" version, strain the beet mixture before adding to ice filled glasses. If the little chunks don't bother you and you want to enjoy the nutritious fiber, pour the mixture right into your ice filled glasses.
Garnish with a lime wedge and cheers to good health!
